Tu r\u00e9serves ces oignons revenus.<br \/>\n&#8211; Tu fais ensuite revenir tes filets mignons de chaque c\u00f4t\u00e9 puis tu les laisses cuire \u00e0 feu tr\u00e8s doux pendant quelques minutes -pas plus de dix-.<br \/>\n&#8211; Tu r\u00e9incorpores les oignons revenus et tu poursuis la cuisson pendant 5 minutes, en assaisonnant \u00e0 ton go\u00fbt. Tu r\u00e9serves.<br \/>\n&#8211; Tu d\u00e9roules les deux p\u00e2tes feuillet\u00e9es que tu peux acheter toute pr\u00eate dans le commerce, il y en a de tr\u00e8s bonnes !<br \/>\n&#8211; Tu d\u00e9poses sur chaque p\u00e2te feuillet\u00e9e une tranche de jambon et du gruy\u00e8re r\u00e2p\u00e9 &#8211;<em>environ 75-100 grammes<\/em>-. Tu assaisonnes mod\u00e9r\u00e9ment.<br \/>\n&#8211; Tu d\u00e9poses sur chaque p\u00e2te garnie ton filet mignon revenu avec ses oignons.<br \/>\n&#8211; Tu enveloppes d\u00e9licatement ce filet mignon de la p\u00e2te feuillet\u00e9e garnie et tu soudes les bords avec un peu de jeune d&rsquo;oeuf.<br \/>\n&#8211; Tu mets \u00e0 cuir au four &#8211;<em>180 \u00e0 200 degr\u00e9s, 45 minutes<\/em>-.<br \/>\n&#8211; Pendant cette cuisson, tu fais revenir des champignons &#8211;<em>il existe d&rsquo;excellents m\u00e9langes surgel\u00e9s dans le commerce<\/em>-, \u00e0 feu tr\u00e8s vif, puis tr\u00e8s doux : attention, les champignons contenant \u00e9norm\u00e9ment d&rsquo;eau, il faut en mettre beaucoup pour en r\u00e9cup\u00e9rer un peu !!!<br \/>\n&#8211; Dans une autre casserole, tu fais revenir avec un peu de beurre l&rsquo;autre moiti\u00e9 des oignons pel\u00e9s et \u00e9minc\u00e9s tout au d\u00e9but ! Tu peux les laisser revenir assez longtemps \u00e0 feu tr\u00e8s doux, l&rsquo;ensemble doit devenir moelleux et fondant, sans que les oignons brunissent. En fin de cuisson, tu rajoutes du piment d&rsquo;Espelette, un peu de Cheddar coup\u00e9 en petits morceaux qui va apporter une saveur un peu plus relev\u00e9e et de l&rsquo;onctuosit\u00e9, une g\u00e9n\u00e9reuse cuill\u00e8re \u00e0 soupe de moutarde fine et 25 cl de cr\u00e8me fra\u00eeche \u00ab\u00a0fluide-\u00e9paisse\u00a0\u00bb.<\/p>\n<p style=\"text-align: justify;\"><strong><a href=\"https:\/\/latelierdediablotin.fr\/WordPress3\/wp-content\/uploads\/2017\/06\/Hamb2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-6350\" src=\"https:\/\/latelierdediablotin.fr\/WordPress3\/wp-content\/uploads\/2017\/06\/Hamb2-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" srcset=\"https:\/\/latelierdediablotin.fr\/WordPress3\/wp-content\/uploads\/2017\/06\/Hamb2-300x300.jpg 300w, https:\/\/latelierdediablotin.fr\/WordPress3\/wp-content\/uploads\/2017\/06\/Hamb2-150x150.jpg 150w, https:\/\/latelierdediablotin.fr\/WordPress3\/wp-content\/uploads\/2017\/06\/Hamb2-100x100.jpg 100w, https:\/\/latelierdediablotin.fr\/WordPress3\/wp-content\/uploads\/2017\/06\/Hamb2.jpg 476w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>\u2022 Montage<\/strong><br \/>\n-Tu d\u00e9coupes d\u00e9licatement de fines tranches de filet mignon en cro\u00fbte.<br \/>\n&#8211; Dans un cercle de cuisine, tu en d\u00e9poses une \u00e0 la base du dispositif, que tu recouvres de champignons po\u00eal\u00e9s.<br \/>\n&#8211; Tu red\u00e9poses au-dessus des champignons une seconde tranche de filet mignon en cro\u00fbte.<br \/>\n&#8211; Tu d\u00e9cercles l&rsquo;ensemble pr\u00e9cautionneusement et tu le nappes de sauce oignon-cr\u00e8me fra\u00eeche-moutarde.<\/p>\n<p style=\"text-align: justify;\"><strong>\u2022 Service<\/strong><br \/>\n&#8211; Tu sers accompagn\u00e9 d&rsquo;une galette de l\u00e9gumes et de salade verte et tu d\u00e9gustes tranquillement accompagn\u00e9 d&rsquo;un vin rouge l\u00e9ger -un bon Beaujolais- ou d&rsquo;un vin blanc d&rsquo;Alsace un peu sec &#8211;<em>tu penses \u00e0 consommer ces deux liquides avec mod\u00e9ration, cela va sans dire\u2026<\/em>-.<\/p>\n<p style=\"text-align: justify;\">Et voil\u00e0 ! L\u00e9ger &#8211;<em>si si<\/em>&#8211; simple et go\u00fbteux !
